Reese's Peanut Butter Cup Cookies for the Great Food Blogger Cookie Swap

I'll take three plates of these please...and keep 'em coming.
I made these little cookies for the Great Food Blogger Cookie Swap!  A group of bloggers signed up to bake at least 3 dozen cookies to send out to 3 different recipients....we had no idea who was sending us cookies.  We just had to sit and stare at our front porch, with our glass of milk, waiting for our cookies to arrive.

These cookies are just a peanut butter cup with a little more peanut butter flavor.   I call them Nikki Chin cookies because my BFF was the first person to introduce me to them.  Plus they are sort of like her, adorable and sweet in a cute little package. All you need is a mini muffin pan and I recommend an assistant to unwrap the Reese's for you.

Reese's Peanut Butter Cookies

makes at least 40 cookies
1 3/4 cup flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 cup softened butter
1/2 cup granulated sugar
1/2 cup peanut butter
1/2 cup packed brown sugar
1 egg, lightly beaten
1 teaspoon vanilla
2 Tablespoons milk
40 miniature Reese's peanut butter cups
Preheat oven to 375.  In a large bowl whisk together flour, salt, and baking soda.  Set aside.
Cream together butter, sugar, peanut butter and brown sugar until fluffy.  Beat in the egg, vanilla, and milk.  Add your dry ingredients.  Mix well.  Roll into ball shape and place in ungreased muffin tin.
Bake for 8 minutes, cookies will be light golden brown.  Immediately press a Reese's cup in the middle of each cookie.  Cool completely and remove from pan.
This is the perfect cookie for those peanut butter lovers in your home.  They really are quick and easy to make and equally quick and easy to eat!
