Yep, a nice healthy salad. This was a double serving of berries in the dressing and the actual salad.
This is so quick and easy to dish up. The flavors are fantastic! Tastes like summer.
I love making my own salad dressings. The ingredients are so simple and you are likely to have all the things you need right in your pantry. Plus instead of spending $4 for a bottle, you spend pennies! Then, no plastic bottle to waste. Try it..just start combing flavors and see what you come up with!
Strawberry Champagne Vinaigrette
serves 4 as a side salad
1/2 cup sliced and hulled strawberries
2 Tbsp Champagne vinegar
1 Tbsp sugar
pinch of salt
puree all ingredients together in your blender. I used my Magic Bullet and it worked great.
Spinach salad
I combined Spinach leaves, more sliced strawberries, slivered almonds, and goat cheese.
This is a great salad you can customize. Use cranberries, candied walnuts, dried cherries..whatever tastes good to you!
Top with dressing and enjoy!

Chocolate chip mint (DH's favorite). The Elvis: banana cake with coconut and pineapple and just about the best peanut butter frosting ever. The Neapolitan, chocolate cake with strawberry and vanilla frosting.
