Gingerbread Spice Tea Cake and a Giveaway!

I recently received an email with this subject line, "do you cook with tea?"  I had to admit, I had never cooked with tea.  I had honestly never considered it, but I"ll try anything twice.  
I was sent some holiday teas from Celestial Seasonings and a few different recipes.  I decided to try the Gingerbread Spice Tea Cake. The recipe recommends baking the cake in an 8x8x2 square pan, but I decided to use these mini bundt pans that BFF Nikki gave me for Christmas.
The batter made a little more than enough for these 4 little guys. This was a super easy, one bowl recipe.  I'd like to use this recipe and try some different flavor enhancements.   This would be a great dessert to serve to friends. I topped them all with a powdered sugar glaze and a pinch of nutmeg.
Gingerbread Spice Tea Cake
makes one 8x8x2 square cake, or 4 mini bundt cakes
1/2 cup water
2 Celestial Seasonings Gingerbread Spice Tea Bags
3 eggs
3/4 cup sugar
1 tsp vanilla
1 1/4 cups flour
1 1/2 tsp baking powder
1/2 tsp salt
Preheat oven to 350. Grease and flour your pans.  Bring the water to a boil, add tea bags, and allow to steep for 3-5 minutes.  MIx the remaining ingredients in a large bowl.  Add the tea carefully squeezing excess liquid from the tea bags. Mix well and pour into pan.
*If you decide to bake in mini bundt pans, fill a little over halfway.  Place pans on a baking sheet in case you have any overflow.*
Bake for 25 minutes.  
Powdered Sugar Glaze
1 1/4 cups powdered sugar
3 Tbsp milk
Mix together. Drizzle over cakes! Add a little sprinkle of nutmeg to each cake.


These little cakes turned out great! Super easy recipe and a nice dessert.
