Apple Crisp for two

Typically I do not scale down dessert servings.  I love too much of a good thing.  However, this is an easy treat to make for two, or a nice big serving for one!
Apple crisp is great in the summer.  Don't forget the vanilla ice cream on top! 

For me, the best part of the apple crisp is the crumbly topping.  I also like to have a layer of this on the bottom to form a crust.  This recipe baked up perfectly in my favorite  Staub mini cocottes.  Red is perfect for apple crisp!  You could easily bake this is in two ramekins or a small baking dish.

Apple Crisp for two
2 apples, peeled, cored, and diced (I used Gala)
1 tsp sugar
1/2 tsp cinnamon
1 tsp flour
6 Tbsp oats
3 Tbsp cold butter
3 Tbsp brown sugar

Preheat oven to 350
Toss apples with sugar, cinnamon, and flour.  Set aside.
In a separate bowl, combine oats and brown sugar. Cut in butter until crumbly.  Go ahead and use your hands to mix if needed! Place a layer of the oats mixture in the bottom of your dish(es).  Top with apples and the remainder of your oat mixture.  
*If you prefer to only have the oats and brown sugar as a topping and not a crust, just cut those ingredients in half: 3 Tbsp oats, 1.5 Tbsp butter, 1.5 Tbsp brown sugar and sprinkle on top of apples. 
Bake for about 30 minutes or until apples are soft and your house smells awesome!
