Carmelitas

Caramel, chocolate, and oatmeal.  Can't really go wrong.  This recipe comes together in no time and makes a nice big pan.
I made these bars for last month's bakin' friends.  I really like any bar cookie that has oatmeal.  Plus since it has oatmeal, it's acceptable to eat for breakfast.  This would be a great bar to pack in those back-to-school lunches, or have on hand when the kids get home.  Or, forget the kids and eat the whole pan yourself.
Carmelitas
makes one 9x13 pan
2 cups flour
1 cup brown sugar
2 cups oats
1 1/2 cups melted and cooled butter
2 tsp baking soda
1 12 oz jar caramel ice cream topping
1/2 tsp sea salt
1 bag (12oz) chocolate chips
Preheat oven to 350.  Grease pan
In a large bowl combine flour, brown sugar, oats, butter and baking soda.
Press half the mixture into the bottom of the pan.  Bake for 10 minutes.
Remove from oven and sprinkle chocolate chips over the top.  Spoon caramel over the chocolate chips.  Sprinkle with sea salt.  
Crumble the remaining oat mixture over the top.  Bake for 15 minutes more.
Allow to cool before cutting.
