Apple Bread

Another great fall treat...yummy apples!  Last year I was lucky enough to receive some samples of Opal Apples.  This year I was sent the Sweetie Apple to try.   I really put these apples to work!  Bread, snacking, and with pork chops.  I love how these apples have a great crunch.  They are sweet, will probably remind you of a Gala.  
There's something so satisfying about the smell of bread in your oven.  This is the kind of bread you want to eat while you are curled up on the couch. Apples just give you that cozy feeling.  These apples are delicious to eat on their own, but I loved them in this bread.
Apple Bread
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 cup softened butter
1 cup brown sugar
2 eggs
2 medium apples. peeled, cored and diced
Preheat oven to 350. Grease loaf pan and set aside.
Combine flour, baking soda, salt, and cinnamon in a small bowl.  In a separate bowl, or using your stand mixer, cream butter and brown sugar until fluffy.  Add the eggs one at a time and combine until well mixed.  Add half dry ingredients and mix until just combined.  Fold in half of the apples.  Add remaining dry ingredients until mixed and fold in the rest of the apples.  Pour mixture into loaf pan and, for a little fun, sprinkle with cinnamon and sugar.  Bake for 50 to 60 minutes, or until a toothpick inserted in the middle comes out clean.
I imagine this being the perfect after school snack...or a perfect snack to eat while the kids are at school.  The Sweetie might be my favorite new apple!  They are available here in the Pacific Northwest for a limited time at Safeway, Winco, or Haggen stores. Better hurry though....I might just eat them all!
